Biscotti- basic recipe

Basic Biscotti

  • 250 g All purpose flour (2cups)
  • 250 g sugar (1 1/4c )
  • 1/2 tsp baking powder
  • 2-3 eggs
  1. preheat oven to 325 degrees

    Mix all ingredients in a stand mixer and add flavors/variations.  Start with 2 eggs- if too dry, add a 3rd egg. If using large eggs, 2 normally work. It also depends on how many additional ingredients you add.

    Variations: 1c almonds sliced, 1/2c cranberries, zest of one orange

    pistachios and cherries and white chocolate chips

    Lemon zest and rosemary 

    chocolate chips

    Fennel and lemon and rosemary 

    white chocolate chips and orange zest 

    poppy seed and lemon.... options are endless 

    Divide into two logs and bake for about 25 minutes.  Remove and let cool until just warm to the touch and slice into thickness that you want and bake until slightly golden brown about another 10 minutes, turn over and bake another 10 minutes. 

    They will harden as they cool.  You can store in freezer as well.
