Easy Tortilla Recipe (GF optional)
- 2 c flour (all purpose OR GF 1:1 baking flour)
- 1 tsp salt
- 3 T olive oil (or melted butter, coconut oil...)
- 3/4-1 c water
- optional: herbs and spices

Mix dry ingredients together and add in olive oil and water until a firm but workable dough forms. Knead for 10 minutes finishing with a smooth ball and let rest for 5-10 minutes. Separate dough into about 8 pieces ( fewer or more depending on how large of tortillas you want) and roll out into thin circles. Heat a pan, griddle, or pizza stone on a grill and cook each tortilla for about 30 seconds per side. They should puff up a bit as they cook but will flatten back down. Adjust time depending on how fast your cook.
