Cinnamon Eggnog Waffles

  • 2 cups flour (spelt, organic wheat, unbleached all purpose)
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp unrefined sea salt
  • 1 T cinnamon
  • 1/2 tsp nutmeg
  • 2 eggs- beaten
  • 2 cups eggnog
  • 1 tsp vanilla
  • 5 T melted butter or coconut oil
  • optional: 1/2 cup chopped pecans
  1. In a large bowl combine all dry ingredients. Add in the wet ingredient and combine completely. Batter may seem thick. Mine turned out great as a thick batter as my waffle maker spreads it out evenly. You can add more milk if you need to thin it out. I also doubled the recipe and had plenty of waffles to freeze away for later- this is what I recommend doing anytime you make pancakes or waffles. Serve with cinnamon whipped cream/butter/plenty of real maple syrup!
