Chocolate Mosaic Salami
A fun no-bake dessert inspired by traditional recipes from many cultures and countries around the world!
Makes: 1 log (10–12 slices)
Ingredients
200 g (1¼ cups) semisweet chocolate chips
Choose ONE:
56 g (¼ cup / 4 Tbsp) unsalted butter
OR
50 g (3½ Tbsp) stick margarine*
2 Tbsp unsweetened cocoa powder
2 Tbsp heavy cream or whole milk
1 tsp vanilla extract
⅛ tsp salt
* Avoid soft tub spreads, which contain more water and may result in a softer finished dessert. We used butter in camp.
2026 Camp Version: Cookie & Marshmallow Mix
100 g Biscoff cookies (about 10–11 cookies or 2 cups broken pieces)
100 g vanilla wafers (about 18–22 wafers or 2 cups broken pieces)
You can also just do all Biscoff or vanilla wafers. Or see below for different variations.
1 to 1½ cups mini marshmallows
Coating
¼–½ cup powdered sugar
Instructions
Break the Biscoff cookies and vanilla wafers into irregular ¼- to ½-inch pieces. Avoid crushing them into fine crumbs.
In a microwave-safe bowl, combine the chocolate chips, butter (or stick margarine), and cream. Microwave in 20-second intervals, stirring between each, until smooth.
Stir in the cocoa powder, vanilla, and salt until fully combined.
Let the chocolate mixture cool for 5–8 minutes so it thickens slightly.
Fold in the broken cookies and marshmallows until evenly coated.
Transfer the mixture onto a sheet of plastic wrap and shape into a log about 2 inches in diameter. Wrap tightly, twisting the ends to compress the mixture.
Refrigerate for at least 2 hours, or overnight for the cleanest slices.
Roll generously in powdered sugar before slicing and serving.
Storage
Refrigerate up to 1 week.
Freeze up to 2 months. Thaw in the refrigerator before serving.
Popular Variations
Choose one or combine several of the ideas below. As a general guideline, keep the total additional mix-ins to about ½–1 cup so the chocolate mixture still binds everything together.
Chocolate Options
You can use any baking chocolate chips or combine varieties for a unique flavor. Keep the total chocolate at 200 g (about 1¼ cups).
Classic
200 g (1¼ cups) semisweet chocolate chips
Dark Chocolate
200 g (1¼ cups) dark chocolate chips (60–70% cacao)
Richer, less sweet, and more intense chocolate flavor.
Milk Chocolate
200 g (1¼ cups) milk chocolate chips
Sweeter and creamier. Because milk chocolate is softer, reduce the cream or milk to 1 Tbsp for the best texture.
White Chocolate
200 g (1¼ cups) white chocolate chips
Sweet, buttery, and vanilla-forward. Since white chocolate contains no cocoa solids and is softer, reduce the cream or milk to 1 Tbsp. For best results, pair with dried cranberries, pistachios, lemon or orange zest, or freeze-dried berries.
Crunch
Add ½–¾ cup total of one or a combination of:
Pistachios – ½ cup
Toasted almonds – ½ cup
Hazelnuts – ½ cup
Pecans – ½ cup
Walnuts – ½ cup
Crushed pretzels – ½ cup
Sweet Mix-Ins
Add ¼–½ cup total of one or more:
Mini chocolate chips – ¼ to ½ cup
White chocolate chips – ¼ cup
Peanut butter chips – ¼ cup
Toffee bits – ¼ cup
Mini M&M's – ¼ cup
Rainbow sprinkles – 2–3 Tbsp
Dried Fruit
Add ¼–½ cup total of one or a combination of:
Dried cherries – ¼ cup
Dried cranberries – ¼ cup
Raisins – ¼ cup
Chopped dried apricots – ¼ cup
Candied orange peel – 2–4 Tbsp
Flavor Boosters
Mix into the melted chocolate before adding the cookies:
Cinnamon – ½ to 1 tsp
Espresso powder – 1 tsp
Orange zest – 1 to 2 tsp
Almond extract – ¼ tsp
Peppermint extract – ⅛ tsp
Flaky sea salt – ¼ tsp
Cookie Options
Instead of using half Biscoff and half vanilla wafers, you can use:
200 g (about 4 cups broken pieces) Biscoff cookies
200 g (about 4 cups broken pieces) vanilla wafers
200 g (about 4 cups broken pieces) graham crackers
200 g (about 4 cups broken pieces) digestive biscuits
200 g (about 4 cups broken pieces) tea biscuits
Or mix two or more varieties to total 200 g (about 4 cups).
Fun Flavor Combinations
S'mores: Milk chocolate + graham crackers + mini marshmallows.
Cookies & Cream: White chocolate + crushed chocolate sandwich cookies.
Rocky Road: Semisweet chocolate + almonds + mini marshmallows.
Salted Caramel: Milk chocolate + Biscoff cookies + flaky sea salt.
Mocha: Dark chocolate + 1 tsp espresso powder + toasted hazelnuts.
Mint Chocolate: Semisweet chocolate + ⅛ tsp peppermint extract + crushed peppermint candies.
Orange Dark Chocolate: Dark chocolate + 1–2 tsp orange zest + pistachios.
